Here you have my version on how to make Day of the Dead Mexican Bread, I hope you can give it a try!


Ingredients:
  • 4 Cups All Purpose Flour
  • 5 Large Eggs
  • ½ Cup Granulated Sugar
  • 125 g Melted Butter
  • ¼ cup Fresh Orange Juice
  • ¼ Cup Lukewarm Water
  • Zest of 2 Oranges
  • 1 ½ Tsp Rapid Rise Yeast 
  • 1 Tsp Cinnamon
  • ½ Tsp Nutmeg
  • ½ Tsp Salt
  • 2 tsp Aniseed (optional)



For garnish:
  • 1 beaten Egg
  • Granulated sugar
  • 2 tablespoon melted butter



In a small bowl combine the lukewarm water with the yeast, mix until dissolved, then also add in a ⅓ of a cup  of flour, stir until well incorporated, then set this aside for about 30 minutes or until it doubles in size.


After 30 minutes.  Place the rest of the flour in a large bowl, try to push all the flour to the sides of the bowl, so you will have an empty space right in the center of the bowl.  Right in there, in the center we are going to add in the yeast mixture,  and over the yeast mixture we are going to add in the eggs, one at a time, and stirring each egg for a bit before adding the next one, you want to slowly incorporate the eggs with the yeast mixture. Try to avoid the flour for now, just work right on the center of the bowl .


After the eggs, now, also right in the center, add in the cinnamon, nutmeg, salt, zest of 2 oranges, granulated sugar, orange juice and the melted butter. Stir until combined, and then slowly incorporate the flour into this ingredients.  


Once all the dough comes together, now transfer it to a floured surface and knead it for 10 minutes.


After 10 minutes of active kneading, now place the dough in a greased bowl. Cover it with a kitchen towel and let it rise for 2 hours, or until it doubles in size.
After 2 hours, transfer the dough onto a floured surface, punch it a bit  just to get some of the air out. And then divide the dough into 4 sections, one of the sections should be slightly smaller than the other three.


Shape the three bigger sections into balls, you want them to be nice and round. (those would be our bread). Place them on a baking sheet, mine is lined with parchment paper.


Now with the rest of the dough make the decorations.  Each bread will have 2 bones and one head. To make the bones, just grab some of the dough and roll it until you get a long rope, about half and inch thick. You will need two ropes for each bread. So make six of them. And then to make the head, just grab about 1 ½ - 2  tablespoons of the dough and roll with your hands to form a ball. That. will be head, and you need one for each bread.  So make three of them.


Now to glue the decoration. Just brush a bit of water on the bread right on the spot that you will place the decoration. And place the decoration on top. Press it a bit.   Place two ropes on each  bread to form an X and then right on the center of the bread, place the small ball, use some water to glue it in place.


After they are all done, cover them with a clean kitchen towel and let them rise for another hour.


After an hour. Preheat the oven to 340ºF.  Brush the bread with a beaten egg. Baken them at 340ºF for 25 minutes or until cooked.


After they come out of the oven, brush them with melted butter. And sprinkle them with plenty of granulated Sugar.

Makes 12 cupcakes
Cupcakes Ingredientes:
  • 1 cup All Purpose Flour
  • 1 Cup Granulated Sugar
  • ½ cup cocoa powder 
  • 1 tsp Baking Powder
  • ½ Tsp Salt
  • 1 Large Egg
  • ½ cup Milk
  • ½ cup Vegetable Oil
  • ½ Cup hot water 
  • 1 tsp Vanilla extract



Icing Ingredients:
  • 226g Cream Cheese
  • 113 g Unsalted butter
  • 2 - 3 Cups Powdered Sugar
  • 1 tsp Vanilla extract



For Decoration:
  • Red Food Gel (decoration)
  • Icing Butcher Knife (decoration)
  • Icing Eyeball Decoration 




Preheat the oven to 350ºF


In a large bowl sift the sugar with the flour, salt, baking powder and cocoa powder. Mix well and set aside.


In another bowl combine the egg with the  vanilla extract, the vegetable oil and the milk,  stir until well combined.


Add the egg mixture into the flour mixture, stir until incorporated. Then add in half a cup of hot water.  Mix until everything is well incorporated. You will get a very runny batter. That’s perfect.


Pour batter into your prepared cupcake pan.   Bake at 350ºF for 20-25 minutes or until cooked.


Let the cupcakes cool completely before decorating them.


To make the icing:  With an electric mixer combine the cream cheese with the butter the vanilla extract and the powdered sugar. Mix on high for about 3-4 minutes or until you get a fluffy and creamy icing.  Set aside in the refrigerator until you are ready to use it.


Once the cupcakes are completely cold. Now decorate them, Add as much icing as you like, then top each cupcake with the icing butcher knife, place it right on the center of each cupcake and decorate each cupcake with the red gel.  Repeat these steps until you are done!

Ingredients:
  • 2 ripe Bananas
  • 1 Cup Quick Oats
  • 2 Tbsp Peanut butter



For Decoration:
  • 12 oz White Candy Melts or White Chocolate 
  • Red Gel Food Coloring
  • Small Candy Eyeballs
  • Cakepop sticks



Mash the bananas together with the peanut butter, until you get a puree, then add in the oatmeal, toss together until well combined. (if the batter feels to sticky add another tablespoon of quick oats.)  


Take about a tablespoon of this batter and roll it into a ball, place it on a baking sheet to freeze, keep on repeating these steps until you are done. Freeze the balls for about 30-40 minutes or until firm.


After 30-40 minutes.  Melt the white chocolate or candy melts.
Dip the sticks on the melted chocolate, to cover about one or two inches from the top of the stick, then insert the stick right on the center of a banana ball. (keep on repeating this step until all the balls have a stick in.)


Cover the banana balls with the melted chocolate, then place two candy eyeballs on each banana ball. (keep on repeating these steps until all the balls are covered with the chocolate and have a set of candy eyeballs.


Place the leftover melted chocolate in a bag, cut the tip of the bag with a pair of scissors, and finish decorating the banana balls, add  ribbons all around the banana balls, like if they were bandages. You want them to look kind of like a mummy head.  Then decorate them with the red gel. And that’s it.

Ingredients:


  • 2 cups All Purpose Flour
  • 2 sticks of Unsalted Butter (113 g each)
  • ½ Cups Powdered sugar
  • ¼ Tspn Salt
  • 2 Tspn Vanilla Extract
  • 1 Cup Dove Chocolate Covered Mixed Berries
  • 4 oz Dark Chocolate 
  • Red Gel for decoration (food Gel)



Preheat the oven to 350ºF


Mix the flour with the salt, stir well and set aside for a minute


With an electric mixer,  on medium high speed, combine the butter with the powdered sugar,  for about 2 minutes or until the butter mixture becomes a bit fluffy, then add in the vanilla extract, and continue to mix for 30 more seconds.\


Scrape down the sides of the bowl, reduce the speed to low and slowly add in the flour mixture.


Once you add all the flour, continue to mix on medium speed until the batter comes all together and it sticks to the mixer beater.


To make the cookies, grab a bit of the batter, and roll it with your hands to form a ball.  Then flatten it up to about of an inch, and place it on a baking sheet.  Repeat this step until you have all the cookies.


Make sure the cookies are about an inch apart from each other before they go into the oven.


Bake them at 350ºF for about 15-18 minutes or until cooked and slightly golden.  Once they come off the oven, let them cool for a few minutes.


Melt the dark chocolate. I just placed it in a plastic bag and microwaved it for 60-90 seconds.


Now to decorate the cookies, you will use the melted chocolate to draw some spider’s legs on the cookies. You can either draw 6-8 legs, whatever you decided.  Now grab one of the chocolate covered berries, put a bit of chocolate on it, and place it on the  cookie, right above the spider’s’ legs. Grab another of the berries (make sure is smaller than the first you used) also add a bit of melted chocolate to glue it to the berry that's already on the cookie . And that’s it, now you have a spider on the cookie.  Keep on doing this until you are done.


Once you are done grab the red gel, to add a dot or line right at the end of the spider’s body. Just like you see on the picture.

And that’s it. They are ready.

Here you have a super easy and delicious Bread recipe for this season! It’s perfect for breakfast or a  dessert! Enjoy!


Ingredients:
  • 2 cup All purpose flour
  • 1 ½ cups Brown Sugar
  • 1 Cup Dry Cranberries
  • 1 can (15 oz) Pumpkin puree
  • ⅓ cup Orange Juice
  • 113 g Soften Butter
  • 2 Large Eggs
  • 2 Tspn Baking Powder
  • ½ tspn Baking Soda
  • ¼ tspn Salt
  • 1 Tsp Ground Cinnamon
  • ¼ tspn Ground Ginger
  • ⅛ tspn ground Cloves
  • 1 Tsp Vanilla Extract
  • Zest of One Orange



Glaze:
  • 1 ½ cups Powdered Sugar
  • 2 Tbsp Orange Juice or Water



Preheat oven to 350 ºF.


Grease and flour a 9 ¾ in round Pound Cake pan.


In a large bowl, mix the flour with the baking powder, baking soda, salt, cinnamon, ginger and the cloves, stir well until combined and set aside.


With an electric mixer, on medium speed, mix the butter and brown sugar for about 2 minutes or until you get a creamy and grainy paste.  Then add in the eggs, one at a time, mixing each egg for 30 seconds before adding the next one.  After you add in the last egg, continue to mix for one more minute. Then add in the Pumpkin puree, mix until combined, then add in the orange zest,  the vanilla extract and the orange juice, continue to mix on medium high speed for 30 more seconds.


Reduce the speed to slow, then add in half of the flour mixture, mix on low speed for a few seconds, just so the flour will start to incorporate with the rest of the ingredients, then add in the rest of the flour, and continue to stir on low until incorporated. Then add in the Cranberries, and stir until combined. Do NOT over mix.


The batter is ready, it should be very rich and thick. Pour it into a prepared pan. Bake it at 350ºF for about 40-50 minutes or until well cooked.


You will now the bread is cooked when you insert a toothpick right in the center and it comes up with a bit of bread crumbs.


As soon as the bread comes off the oven, run a knife along the edges to separate it from the pan. Let it cool in the pan for 10 minutes, then transfer it to a plate.


Let the bread cool completely before garnishing it.


You can either dust it with Powdered sugar.  Or make a glaze to glaze it.


To make the glaze: Combined 1 ½ cup of powdered sugar with 2 tablespoons of orange juice or water, and stir well until the sugar has dissolved.


Once the bread is cold, drizzle it with the glaze on top and that’s it.

Here you have a super easy vegetarian dish for any day of the year!! Enjoy


Ingredients:
  • 14 oz Tofu (397 g) (drained and pressed)
  • 1 Green Bell Pepper (julienned)
  • 1 Re Bell Pepper (julienned )
  • 4 Green onions (in 2 inch Pieces)
  • 2 minced Garlic Cloves
  • 1 Tbsp Minced Ginger
  • 10 Arbol Chillies
  • Salt to taste
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Peanut Oil
  • 2 tspn Cornstarch
  • +Toasted Sesame Seeds (to taste)


Drain and press the tofu. (watch the video to learn how I do it.)
After the tofu is drained and pressed, now cut it into bite size pieces. Place it in a bowl and season it with two tablespoons of soy sauce and half a tablespoon of peanut oil. Toss well marinate it for 10 minutes.


In a small bowl combine two tablespoons of Soy Sauce with two teaspoons of cornstarch, mix well until the cornstarch is well dissolved and set aside until you are ready to use it.


In a wok, or large skillet on medium high heat, heat up half a tablespoon of peanut oil, stir fry the bell peppers together with the  minced garlic and the minced ginger.  Stir fry this for two minutes. (if you like your peppers to be super tender, stir fry them for a longer time!)  Then add in the Tofu and continue to stir fry for two more minutes, just so the tofu will get some color.  Then add in the Dry chili de arbol, together with the green onions, stir fry for one more minute, just to combined all the flavors.


Then add in the Cornstarch mixture, stir well until all the ingredients are well covered with the sauce, then sprinkle with toasted sesame seeds, and continue to stir fry for one or two more minutes until everything is well heated through.


Serve with white rice.
