Here you have another super easy and delicious recipe for Lent or any other day of the week! I hope you like it!! Enjoy

Ingredients:
  • 750 g Fish Fillets cut into chunks
  • 1  Cup Breadcrumbs
  • ½ Cup Cornstarch
  • 2 Eggs
  • ½ - 1 Tsp Paprika 
  • ½ -1  Tsp Ground Black Pepper
  • 1 Minced Garlic Clove
  • Salt (to taste)
  • Cooking Spray 


Preheat the oven to 400ºF


Season the eggs with the minced garlic, also add a pinch of salt, black pepper and paprika. Stir until the eggs are well beaten and set aside for a minute.


Season the breadcrumbs with the rest of the salt, black pepper and paprika. Stir, taste the flavor, add more seasonings if needed. Set aside for a minute.


Coat the fish chunks with the cornstarch. Tap to remove the excess cornstarch and soak the fish chunks in the egg mixture, make sure they are completely wet with the egg mixture on all sides.  Tap to remove the excess egg, and transfer the fish chunks to the breadcrumbs mixture.  Cover the fish chunks with the breadcrumbs on all sides.


Place the fish pieces onto a baking dish, spray them with cooking spray, and bake at 400ºF for about 8-12 minutes or until golden brown and well cooked.


To serve them as an appetizer, just serve them with your favorite sauce.
Serve them with a salad, to make a very light lunch.
Or you can  also make some great tacos with these, just place them in a tortilla and top them with lettuce and Pico de Gallo.

Ingredients:
  • 1 - 2  lbs small potatoes
  • 3-4 Tbsp Extra Virgin Olive Oil
  • 2 minced Garlic Cloves
  • 2 Tsp Dry Thyme
  • 2 Tsp Dry Parsley
  • 1 Tsp Crushed Red Pepper
  • Salt (to taste)
  • Black Pepper (to taste)
  • 2 Tbsp Chopped Fresh Parsley (optional)



Preheat the oven to 400ºF


Combine the olive oil with the dry thyme, dry parsley, minced garlic, crushed red pepper and salt and black pepper to taste.


Stir well until combined, then heat up in the microwave for about 30 seconds to a minute.  Set aside until you are ready to use it.


Cut the potatoes in half or any way that you want to cut them. Place the potatoes in a baking sheet, pour the seasoned oil over them, toss well until every single potato is well seasoned with the oil, then sprinkle a bit of salt and pepper over them.


Cover them with aluminum foil, and bake at 400ºF for 15 minutes or until well cooked. (The cooking time will depend on the size of the potatoes!)


Once the potatoes are cooked, add 2 tablespoons of chopped parsley and toss until combined. Serve the potatoes with your favorite main dish.

Ingredientes:
  • 16-20 Chicken drumsticks
  • 2 Tbsp Extra Virgin Olive Oil
  • ½ Cup Clam-Tomato Juice
  • 1 ½ Cups Beer
  • 2-3 Tbsp Lime Juice
  • 2 Tbsp Maggi Sauce
  • 2 Tbsp Minced/Grated Onion
  • 2 Tbsp Chopped Cilantro
  • 2 Minced Garlic Cloves
  • ¼ Tspn Cumin
  • Salt (to taste)
  • Black Pepper (to Taste)
  • Crushed Red Pepper (to Taste)



Season the chicken pieces with a sprinkle of salt and pepper.


In a large bowl combine the beer with the rest of the ingredients. Mix well, taste the flavor add more salt and pepper if needed.


Place the chicken pieces in the same bowl with the beer mixture. Marinate the chicken pieces in the beer mixture for at least one hour before cooking it.  If you have more time, feel free to marinate it for more time.  Remember the more you marinate the chicken, the more flavor it will have.


Once you are ready to cook the chicken. You can either grill it, broil it or bake it.


To Bake it:
Preheat the oven to 400ºF


Place the chicken pieces on a baking rack, cook them for about 35 minutes or until they are well cooked.  The cooking time will depend on the size of the chicken pieces.


Once they are done, let them rest for about 5 minutes before serving them.


You can serve them as an appetizer, just serve them with your favorite hot sauce and lime wedges.


Or Serve them with rice and baked potatoes to make a perfect Dinner!

Here you have a delicious and easy recipe for this Lent Season


Ingredients:
  • 1 Cauliflower 
  • 3-4 Chopped Tomatoes
  • ½ Chopped Onion
  • 2-3 Minced Serrano Peppers
  • ¼ Cup Chopped Cilantro
  • 1 Lime (+ to taste)
  • Salt (to taste)
  • Black Pepper (to taste)

To Serve:

  • Tostadas
  • Avocado  



Cook the cauliflower in salted boiling water, until it’s tender, for about 5-8 minutes. (more if you want it really tender)  Drain it, place it in a large bowl, and let it cool.


Chop the cauliflower into small pieces, place it in a large bowl, and add in the chopped tomatoes, chopped onions, chopped cilantro and minced serrano peppers, season with the lime juice and also add salt and black pepper to taste.  Toss together, taste the flavor add more lime, salt and pepper if needed. Once you are happy with the flavor, refrigerate it until you are ready to serve it.


Serve on Tostadas, and garnish with avocado wedges!
