Hi everyone!


Here you have the perfect recipe for this Xmas or New Year’s Eve, it’s so easy and delicious! I hope you like it.


Ingredients:
  • 6 lbs. Pork Loin
  • 4 Garlic cloves
  • 4 small Bay Leaves (2 large ones)
  • 2-3 Cubes Chicken Flavor Bouillon
  • ½ Tbsp Dry Oregano
  • Salt (to taste)
  • Black Pepper (to taste)
  • 1 can Chipotle Peppers in Adobo Sauce (100-200 g)
  • 2 Cans Beer (355ml each)



Place the Chipotle peppers in the blender, season them with the dry oregano, salt and pepper to taste; also add in four garlic cloves, one bay leave and two cubes of chicken flavor bouillon, to this also add in half the beer.  (I used a large can of chipotle peppers in adobo sauce, but the spiciness of this dish depends on you, feel free to add as many peppers as you like.  My Pork Loin didn't turn out spicy at all,  the beer balances the heat of the peppers really well, but feel free to use less peppers if you like!)


(I also used two cans of beer, but if you prefer a less stronger flavor feel free to only use one can of beer and replace the second can with 355ml of water or chicken broth!)


So blend all the ingredients in the blender on high speed for about 2 minutes or until well combined into a sauce.


Place the Pork Loin in a baking dish, rub it with a pinch of salt and pepper.  Grab a knife and make some cuts on the surface of the pork loin. (The cuts don't have to be deep at all. Make them about ½ inch deep.)


Pour the Chipotle sauce all over the Pork Loin and rub the sauce really well onto the pork loin, make sure the meat is well seasoned on all sides.  And also try to get some of the sauce in the cuts you made on the pork loin.


Pour the leftover beer or water or chicken broth into the baking dish with the pork loin, also add in the left over bay leaves and one or two more whole chipotle peppers. Marinate this in the refrigerator for at least one hour before cooking it. If you have more time, feel free to marinate it for more time. (Overnight will be perfect!)


Preheat the oven to 350ºF.
Before you place the Pork Loin into the oven, baste it with the beer liquid, then cover it with aluminum foil, the bake it at 350ºF for one hour.


After an hour, remove it from the oven, set the oven temperature to 400ºF.


Baste the Pork Loin with its cooking liquid, leave it uncovered and place it in the oven and continue to bake, uncovered, for about 40 more minutes or until the Pork Loin is well cooked.


The internal temperature of the Cooked Pork Loin should be 160ºF. After it reaches that temperature the loin is ready.  Remove it from the oven, baste it again with its cooking liquid, cover it with aluminum foil, and  let it stand for 5 minutes before serving it.  



Garnish with a bit of its own cooking liquid and fresh parsley. Enjoy!





Here you have a super easy and deliciously cheesy and creamy mashed potatoes that are perfect for any day of the week or any special occasion, I hope you like them!

Ingredients:
  • 3 lbs. Potatoes
  • 1 Cup Shredded Cheddar Cheese
  • 3 Chopped Green Onions
  • 12 Bacon Slices cut into small pieces 
  • ½ Cup Butter cut into small pieces 
  • ½ Cup Sour Cream
  • 8 oz Cream Cheese
  • ¼ - ½ Cup Milk
  • 1 ½ Tspn Onion Powder
  • 1 Tspn Garlic Powder
  • 1 Tspn Crushed Red Pepper
  • Salt (to taste)
  • Black Pepper (to Taste)


Preheat the oven to 350ºF

Place the potatoes in plenty of water and cook them on high heat until they are very tender and somewhat overcooked. Drain them and set them aside.

In a large skillet on medium low heat, cook the bacon until it gets brown and crisp on all sides.  Drain it on paper towels to remove the excess fat.

Placed the cooked potatoes in a  large bowl (you can peel them off or leave the skin on if you like) Into the bowl, also add in the butter, the cream cheese, the sour cream and a quarter of a cup of milk, season this with garlic powder, onion powder, crushed red pepper, black pepper and salt to taste. Mash the potatoes with  all these ingredients until they are all well incorporated.  

If you think the mashed potatoes are too dry or to thick, feel free to add another quarter of a cup of milk, then taste the flavor add more salt and pepper if needed.

Once you are happy with the flavor, now add in half of shredded cheese, and also add in half the green onions and half the cooked bacon. Toss together until well combined.  Pour the mashed potatoes into a baking dish. (The baking dish is already greased with some butter).


Top the mashed potatoes with the rest of the shredded cheese, the rest of the green onions, and the rest of the bacon!

Bake at 350ºF  for about 20 - 25 minutes or until the cheese has melted and the mashed potatoes are heated through!



Once they are done, you are ready to serve them! Enjoy!!
