This video will show you how to make Mexican Bimbuñuelos which are like a Fried Pancake, so easy and delicious and budget friendly, enjoy!!


Makes 25
Ingredients:
  • 2 C All Purpose Flour
  • 2 Large Eggs
  • 2 ¼ C Milk
  • 2 Tsp pecan extract
  • ¼ C finely chopped pecans
  • +A pan/mold  to make Fried Bimbuñuelos
  • +Vegetable Oil



to garnish:
  • 1/2 C Granulated Sugar
  • 1-2 Tsps Crushed Cinnamon



In a large bowl we will combine all the ingredients: The flour with the chopped pecans, then add in the pecan extract, two eggs, and also add in the milk, we will start with only two cups of milk, then if you need to add  the other ¼ of a cup of milk you can add it.


So stir everything until well combined, you will get a batter similar to the one you get to make pancakes, however this batter should be more runny, more liquidy, so if you need to add the rest of the milk, go ahead and do so.

This batter will have some texture, some lumps because of the chopped pecans, and that’s fine, don't worry about the lumps, just make sure the batter has the right consistency, it should be thinner than the batter you use to make pancakes.


Once the batter  is ready, now we can make the bimbuñuelos.


So in a large skillet or pan, we are going to heat up plenty of vegetable oil to a temperature of 325ºF. Once the oil is hot, now dip the Bimbuñuelo Mold into the oil, and heat it up for 12 seconds, then shake to remove the excess oil, and transfer the mold onto the batter, just press it very lightly onto the batter, so the batter will attach to the bottom and sides of the mold, the better should never come over the top of the mold, so do not dip the mold into the batter completely.

Once the batter has attached to the bottom and sides of the mold, now transfer it back into the oil, dip the mold back in the oil to fry the pancake, fry it for about 30 seconds, after 30 seconds the pancake should be cooked, and it should come off the mold by itself, if it doesn't use a small knife to remove it from the mold, then flip it around and fry for another 20-30 seconds so it will become more crisp.

Remove from the oil, and then sprinkle with a mixture of sugar and cinnamon, shake off the excess sugar and place the Bimbuñuelo on paper towels so they can absorb the excess oil.

Continue to repeat this step until you are done. Let them cool a bit, and then you can eat them!!

Here you have a family recipe to make a delicious Mexican Menudo --Beef Tripe Soup--, I hope you like it.

Serves 10-12 persons
Ingredients:
  • 5.5 lb. Beef Tripe cut in small chunks (cleaned and disinfected)
  • 1 Cow’s foot  cut in quarters
  • 3.3 lb Nixtamal Corn / fresh Hominy
  • 1 whole Garlic Head
  • 1 small Onion
  • Thyme
  • Marjoram
  • 2 Bay Leaves
  • Salt to taste



Red Sauce:
  • ½ lb Mirasol or Guajillo Dry Chillies
  • 2 Garlic Cloves
  • 1/2 Tbs Dry Oregano



To serve:
  • Chopped Onion
  • Chopped Radishes
  • Lime wedges
  • Chopped avocado
  • dry oregano
  • Chilli de Arbol



Wash the Tripe, really well with powder soap and plenty of water. Cut into bite-size pieces.

In a large  pot,  we are going to cook the hominy with the tripe, remember I’m using nixtamal corn which is fresh hominy, if you are using can hominy,  skip this step and just cook the tripe with the cows foot.

So place the fresh hominy, the tripe and the cows foot into a large pot,  to this also add in a small onion cut in half, a whole garlic head,  and we will also add fresh thyme and fresh marjoram, the fresh herbs are to taste, I added about 20 sprigs of each, also add  plenty of salt and two bay leaves,  now add plenty of water to cover all the ingredients, and we are going to cook this on high heat for about three or four hours or until the hominy, the  tripe and the cows foot are well cooked and tender

Now to make the red sauce:
Soak the chilies in hot water for about 3 hours or until you are ready to use them.

After 4 hours, the hominy, the cow's foot and tripe should be cooked and tender. Remove the garlic head and the sprigs of fresh herbs from the soup. Continue to cook it while you make the red sauce.

In a Blender, blend the chilies with 2 garlic cloves and about 1/2 tablespoon of dry oregano, add enough water to be able to blend the chilies, blend on high until you get a soft sauce.

Strain the sauce over the Menudo Soup, and bring to a boil, taste the flavor add more salt or Oregano if necessary, and continue to boil for another 15-20 minutes.

Then serve. Serve with chopped onion, chopped radishes, chopped avocado, and sprinkle with some dry oregano and chili de arbol, also add lime juice to taste. Enjoy!




Mexican Bread for the day of Holy Kings. I hope you enjoy, so easy and delicous you can make it any day of the year.


Ingredients:
14 g dry yeast
125 g Warm Water (½ cup)
500 g all purpose flour (4 cups)
3 eggs
3 egg yolks
90 g granulated sugar
½ tsp salt
1 tbs orange Zest
1 tsp Vanilla extract
180 g Unsalted Softened Butter (¾ cup butter)
+2 tbs milk (optional)


Decoration
90 g margarine or salted softened butter
90 g powdered sugar
90 g All purpose flour
2 egg yolks
2 oz citron cut into strips (red and green )
candied figs (optional)
candied cherries (optional)
dry fruit (optional)
1 egg slightly beaten
granulated sugar for garnish

In a small bowl or cup, we are going combine the warm water with the dry yeast and two tablespoon of all purpose flour, stir well until dissolved, and let it stand for 20 minutes in a warm place.


After 20 minutes,  the yeast mixture is ready to be used,  it looks very thick and bubbly.

Place the all purpose flour in a large bowl,  make a well in the center, and right in there in the center of the bowl,  add in the rest of the ingredients, which are: three eggs, a pinch of salt, three egg yolks 90 grams of sugar, 180 grams of softened unsalted butter, a tablespoon of orange zest,  and also add in the yeast mixture, and don’t forget to also add in a teaspoon of vanilla extract. With your fingertips start mixing all the ingredients together, and  once all the ingredients are combined now start incorporating the flour, you willl get a very sticky dough,  if you think the dough is kind of dry, and you  were not able to combine all the ingredients together, feel free to add one or two tablespoon of milk,   like i said it will be very sticky and elastic, just like you see in the video.


Once all the ingredients are incorporated in a sticky dough, we will transfer the onto a flour surface and we will knead it for about 8-10 minutes , and you can use up to ½ a cup of extra flour,  to knead it, but try not to use more that than otherwise the dough will harden and lose its elasticity,and the bread will be really hard and dry

The dough will continue to be really sticky so I recommend that you use a spatula to help you knead it, if you use the spatula, the kneading will be easier and you will not need to use as much flour


Once the dough is ready, place it in a bowl, and cover it with plastic and let it rest in a warm place for about 1 hour or until it doubles in size. (spray or rub the bowl with vegetable oil.) (If the weather is too cold outside, you will need to give the dough a little more time to rise...


Prepare the decoration:
Now with an electric mixer we will crema the butter, and once the butter creamed, now add in the sugar, and two egg yolks and mix until combined, after that add in the flour, and continue to mix until everythings is well combined into a soft dough, once it´s ready refrigerate it until you are ready to use it.


After an hour  the dough has doubled in size, now we are ready to knead it again, just need it for about 3 minues, and you will only need about 3-4 tablespoons of extra flour to knead it.  

Then shape the dough into a large ring and place it on a prepared baking sheet (baking sheet is greased and floured.)

Place the ring loaf on the baking sheet and seal the ends of the ring together to close the ring. Insert the tiny plastic dolls from beneath the dough. Let the dough rise again in a warm place for another 40 minutes.


Preheat the oven to 400ºF

Prepare the decoration::
Divide the powdered sugar dough into six equal sections, and keep them in the refrigerator


After 40 minutes, now the loaf has risen again, so now we are going to decorate it. Brush the ring with  a beaten egg.  

Now we are going to daecorate the ring with the powdered sugar dough. Grab a section of the powdered sugar dough, and roll it with your hands until you get a strip  long enough to decorate the ring, my sugar strips are about 4 inches long and 2 inches wide but you can make them as long and wide as you like …


Place the powdered sugar strips around the ring, try to place them one facing another, then decorate the ring with the candied or dried fruit, you can use citron, cherries figs, or any other candied or dried fruit you prefer. 

Once the ring is  decorated, now sprinkle it with granulated sugar,  and  we are going to bake it at 400º for 20 minutes or until cooked.



Once it´s done, let it cool a bit and then enjoy!
