Hi Everyone! Today I will be sharing with you  an amazing recipe from 101Cookingeasy, David was kind enough to let me share his recipe on my Youtube Channel.  I love his recipe, seriously, this is one of the best Fried chicken recipes I have tried in a long time! I made a few changes to his original recipe but if  you want to watch his original recipe, please visit his 101CookingEasy Channel!

Ingredients:
  •  3-3½ lbs chicken pieces  (skin and bone in or skinless and boneless, whatever you prefer is fine)
  •  7-8 cups Vegetable oil for frying (or Cooking Spray for baking! Yes it also makes great baked chicken!)

For the marinade:
  • 2 cups Buttermilk
  • 1 tablespoon Ground Black Pepper
  • 2 tablespoons Kosher Salt
  • Pinch crushed Red Pepper (optional)

For Diping:
  • 3-4 large Eggs
  • ¼ Cup your Favorite BBQ sauce
  • Dash of your Favorite Hot Sauce  (I used Sriracha, Tabasco is also great!)

For Coating:
  • 2½ cups All Purpose Flour
  • 1½ cup Panko Breadcrumbs (optional)
  • 1 Tablespoon Kosher Salt
  • 1 Tablespoon Chicken Flavor Bouillon Seasoning
  • ½ Tablespoon Ground Black Pepper
  • 1 teaspoon Ground Sage
  • 1 teaspoon granulated garlic
    1 teaspoon dry cilantro
    1 teaspoon paprika
  • ½ teaspoon Ground Thyme
    1 teaspoon cayenne pepper
    Pinch Crushed Red Pepper

Rinse the chicken pieces with cold water. Pat them dry with paper towels and place them in a large container.







Combine 2 cups of buttermilk with 1 tablespoon ground black pepper, 2 tablespoons of kosher salt and a pinch of crushed red pepper. Mix well and pour this mixture over the chicken pieces. Cover and Marinate in the refrigerator for at least 2 hours.



Combine the "coating" ingredients. Mix well and set aside until  you are ready to use this mixture.


After 2 hours. drain the chicken from the marinade.


In a a large bowl mix the eggs with ¼ cup BBQ sauce and a dash of Hot Sauce. Beat together until well combined.

Coat the chicken pieces with the flour mixture, then dip them in the egg mixture, and transfer them back to the flour mixture to coat them a second time with the flour. (1.-coat the pieces in flour, 2.-dip in the egg mixture, 3.-coat them again with more flour!) Set them aside for 15 minutes so they can absorb the seasoned flour.

Preheat 7-8 cups of Vegetable oil to a temperature of 350ºF  
(Or preheat the oven to 400ºF and bake the chicken for 25-35 minutes or until well cooked.)

Once the oil reaches the right temperature (350ºF), cook the chicken pieces 3-4 pieces at a time and fry the chicken until cooked.

Chicken legs, chicken thighs and wings with skin and bone in will cook in about 12-15 minutes.
Chicken Breast with skin and bone in, will cook in about 10-12 minutes.
Skinless and Boneless chicken pieces will cook in half the time 5-7 minutes. 

Continue to fry the chicken pieces until all cooked. Serve with mashed potatoes, and enjoy!!

Hi Everyone! Today's recipe is another delicious yet easy Mexican Dish. Green Enchiladas,like the Red Enchiladas, this one is also just as popular! Enjoy.

Makes 16-20 Enchiladas

Ingredients:
Salsa:
  • 1 lb. Tomatillo
  • 5-10 Jalapeño peppers
  • 3 tablespoons of Onion
  • 3 tablespoons Fresh Cilantro
  • ½ cup water o chicken broth
  • 1 garlic clove
  • Salt and Black Pepper to taste
  • ½ tablespoon vegetable oil
Ingredients for the Enchiladas
  • 2 Large Chicken Breast cooked and shredded
  • 16-20 Tortillas
  • Queso Fresco for Garnish
  • Mexican Crema for Garnish
  • Fresh Cilantro for Garnish
  • 1 onion cut into thin slices for Garnish
  • 2 tablespoons vegetable oil (optional)

Peel off the tomatillos. Remove the stems from the jalapeño peppers. Rinse both the Tomatillos and peppers with warm water. Place them in a sauce pan. Cover with enough water and cook them until the peppers and tomatillos are soft. (around 8-10 minutes on medium heat)

Once the peppers and the tomatillos are soft, place them in a blender, together with ½ cup chicken broth or water, 1 garlic clove,  3 tablespoons onion and 3 tablespoons of cilantro, season with salt and black pepper to taste and blend on high for about 2-3 minutes or until you get a very soft sauce. (if the sauce is too thick, feel free to add more water or chicken broth!)

In a sauce pan, heat up ½ tablespoon of vegetable oil, and cook the Green Sauce on medium low heat for about 5-8 minutes or until it comes to a boil.

Heat up the tortillas. I like to heat up (fry) my tortillas in a little bit of vegetable oil, for a couple of seconds on each side,  but if you want, you can heat them up in a griddle or in the microwave.

Once the salsa is ready and the tortillas are heated through, you can make the Enchiladas.


Grab a warm tortilla, dip it in the green sauce for a couple seconds, just enough so the tortilla will be well covered with the salsa. Add some shredded chicken right in the middle of the torilla and then roll it like a taquito.  Place them in a baking dish and keep on repeating these steps until you are done.

once you have all the enchiladas done, spoon some of the green salsa, right over the enchiladas, garnish with queso fresco, onion slices, and cilantro, Place them in a 350ºF preheated oven for about 8-10 minutes or until heated through or place them in the microwave for 1-2 minutes or until well heated through. Then serve.

Hi everyone!  Today's recipe is Flour Tortillas, you can make some amazing burritos with these, or some Chimichangas, Quesadillas, Wraps, the possibilities are endless! I hope you enjoy this recipe! Enjoy

Makes 35-40 Tortillas
Ingredients
  • 2lbs all purpose flour (+ flour for kneading, + flour for rolling out the tortillas)
  • 245 grams Vegetable shortening at room temperature
  • 2 teaspoons baking powder
  • 1 tablespoon salt (salt is to taste, add more of less if you want)
  • 2 cups warm water (115ºF - 45ºC)  
If you want, you can mix all the ingredients with an electric mixer using a kneading hook. 

Mix flour, salt and baking powder together, add in (cut in) the vegetable shortening and mix well with the flour mixture, until you get the texture of coarse breadcrumbs. Once you get the right texture. Form a volcano with the flour mixture, leave a well right in the middle of the volcano. Add 2 cups of warm water right in the  well of the volcano and slowly start mixing the water with the flour mixture. This is a very sticky and messy job. Just continue to work the water into the flour until well combined into a soft dough.

You might need to add more flour or water to get the right texture. So if everything is well combined and the dough is still feeling to sticky, sprinkle some extra flour on it, and keep on kneading it.  If it feels to dry, sprinkle some water over it, and keep on kneading until you get the right texture.

Once you have a nice and smooth dough, keep on kneading it for 3 more minutes. Place it inside a plastic bag, and let it rest for 1 hour.

After an hour or so, the dough is ready. Pinch off a 2 inch piece from the dough and roll it into a circle.  Keep on making 2 inch circles with the rest of the dough until you are done.

Grab one of the small circles, press it down with your hand, and dust the circle with a little bit of flour on both sides. Now with a rolling pin, roll it out until you get a very thin circle about 7-8 inches ind diameter. Keep on rolling out the circles until all the tortillas are done.

Preheat a griddle. Is very important that the griddle is very hot! Place the tortillas on a griddle and cook for about 20 seconds on each side or until well cooked.  Keep on cooking the tortillas until you are done! Enjoy

Hi everyone! Today's recipe is a healthy recipe, perfect for any diet! It's full of flavor and it has very few calories, it also really easy to make, it takes less than 10 minutes and will for sure satisfy your appetite without ruining your diet.

Serves 2
Ingredients:

  • 2 Flatout Whole Wheat Bread (or any other flat bread you like, or whole wheat tortillas)
  • 1  5oz can Tuna in water
  • 1 cup mix greens (baby spinach, arugula or any other baby greens you like)
  • 1 Jalapeño pepper cut into small pieces
  • 3 tablespoons of chopped celery
  • 3 tablespoons of finely chopped red onions
  • 1 shredded carrot
  • 1-2 tablespoons of Mayonnaise
  • 1 tablespoon of lemon juice
  • 1 avocado
  • Salt and Black pepper to taste

Drain the tuna. In a large bowl, combine the tuna, red onions, celery, carrot and jalapeño pepper, season with 1 tablespoon of lemon juice, 1 tablespoon of mayonnaise, salt and black pepper to taste.

Stir together, until all the ingredients are well combined, taste the flavor and add more mayonnaise, salt and pepper if needed.

Grab your flatout bread, add some mix greens right in the middle of your bread or tortilla, and spoon half the tuna mixture over the greens, top it with avocado slices, season the avocado with a pinch of salt and black pepper. Wrap it up. Cut in half and that's it, enjoy!!
